- 150 ml Extra Virgin Olive Oil
- 7 slices Garlic
- 400 g Cherry Tomatoes
- a bunch of Parsley

- 500 g Linguine (Pasta)
The Linguine with Shrimps are one of the most popular pasta ever, a simple and quick recipe to prepare. The Neapolitan recipe for pasta with shrimps is the most famous and appreciated. We prepare it with cherry tomatoes but you can also prepare it in white, so without using tomato. In our recipe for linguine with Shrimps, we will not use the fish comics, but by frying the heads of the Shrimps in a pan, we will give a particularly intense taste to our pasta.
Wash the shrimps, if they are frozen let them defrost, then shell 3 or 4 of them and crush the pulp in a saucer. Keep the heads aside and cut the others' bodies in half with a pair of scissors.
Cut the tomatoes into wedges, then chop the garlic and parsley very finely.
Pour all the oil in a saucepan and add the garlic and cook it without letting it brown. As soon as the chopped garlic come up, pour the shrimp pulp, that you had previously crushed, with the heads and cook them for no more than a minute.
Now add half of the tomatoes and as soon as everything has just been heated, add the remaining shrimps.
Meanwhile, put the pasta into the salted boiling water, which you will have prepared for time, adding a tablespoon of oil to the water so as not to stick the linguine, which will then be drained al dente.
In the meantime, once cooked, remove the prawns from the pot and place them on a plate, then leave to dry the sauce.
When the sauce is sufficiently dried add half of the chopped parsley.
Once the pasta is drained add it to the sauce, mixing well and adding the shrimps, the raw tomato and the other half of the parsley. Bring to the table in the same cooking pot.
