The Beef burrito is a typical dish of Tex-Mex cuisine, a cuisine that combines flavors and culinary traditions of the border, between Mexico and Texas. The burritos consist of a tortilla prepared with soft wheat flour, or alternatively white corn, which is heated to the plate, to make it even softer, and then stuffed with the most varied ingredients.
The possible combinations of the filling are innumerable, ranging from totally vegetarian variations, to those that see the chicken protagonist, perhaps with the addition of cheese, guacamole or various sauces.
The recipe that we propose here, simple and quick in execution, involves the use of corn tortillas, beef, black beans, onions, pepper and corn. Without forgetting, obviously, a little bit of red pepper.
Traditionally the burritos are a street dish, we can choose to serve them for a quick lunch or as the main course of a dinner with friends, accompanied in this case by rice, with or without vegetables, and a mixed salad like Red and green lime salad. A delicious combination is also given by the sour cream to be served separately. However you want to propose them the important thing is to share them and eat them with your hands: the burritos recall the conviviality!
To make beef burritos, start cutting the meat into small pieces with a sharp knife and brown it in a large saucepan with the oil. Salt and pepper. When it becomes uniform, withdraw it and keep it warm in a dish.
In the same cooking base, cook the garlic and the sliced onion thinly until it becomes transparent.
Add the pepper cut into small pieces, leave to flavor for a few minutes and cook with the lid (adding a little 'hot water if necessary) until they have become tender.
At this point add the beans, the tomato sauce and the chilli pepper finely chopped without seeds. Cook until the sauce has shrunk and become thick and creamy.
At the end of cooking add the meat and leave it to flavor for a few minutes. Finally add the well drained corn and mix all.
Heat the tortillas on a plate and fill them with the prepared filling. Fold the edges of each tortilla inward, then roll it up onto itself finally holding the overlapped part down. Cut in half and serve hot meat burrito immediately.
